Favorite stew for Autumn

Hearty Autumn Stew

This Mediterranean Autumn stew has been a staple this fall – perhaps because of the Brussels sprouts and its simplicity. Also works as a good side dish. Try it and fall in love!

Ingredients:

  • 2 tbsp butter / ghee / coconut oil
  • 2 Onions
  • 1-2 cloves of garlic
  • 1 root parsley
  • 1 parsnip
  • 4-5 celery stalks
  • 400 g Brussels sprouts
  • 300 g Ripe giant beans
  • 1 tsp tomato paste
  • Herbs de Provence spice mix (Foodin)
  • Salt
  • Ground black pepper
  • Olive oil
  • Olives
  • Fresh basil

Guide:

1. Wash, peel and chop the vegetables.
2. Cook the vegetables in a pan lightly in a water-fat bath.
3. Add tomato paste, beans, olives, protection, black pepper and Herbs de Provence seasoning. Allow to heat and stir.
4. Serve this hearty autumn stew with olive oil and fresh herbs on top.
