This is probably the best recipe I’ve ever had, as this nourishing broth helped me recover my alertness one tired afternoon. The original recipe and inspiration is by Olli Posti, but judging by the taste, I got pretty close 🙂 Try it and fall in love! For me, this food—and this broth—brought my hibernating love of food back to life.
Energizing Herb & Veggie Broth
Raw materials:
- 1 tablespoon ghee
- 1 tablespoon coconut oil
- 1 teaspoon mild curry
- 1 teaspoon turmeric
- 1 teaspoon fennel seeds
- 1 teaspoon ground black pepper
- 1 zucchini, spiralized
- 1 cm piece of ginger
- 1-2 dl white giant beans or chickpeas
- 100g arugula or baby spinach
- Pinch of rosemary
- Bunch of leaf parsley
- A bunch of thyme
- 1 dl coconut milk
- 1 tablespoon of dijon mustard
- 1 tablespoon of honey
- Juice of 1/2 lemon
- 1/2 dl roasted pine nuts

Instruction:
1. Heat the spices in fat for a while so that their aromas come into their own.
2. Add vegetables and freesa for just a couple of minutes.
3. Add honey, mustard, coconut milk and bring to a boil.
4. Top with lemon juice, olive oil and roasted pine nuts and the dish is ready
