I have tried to make homemade yogurt a couple of times before, but now it turned out like a dream! Thick and creamy, tummy-soothing yogurt, with a slight taste of honey and lime.
Yogurt is a great way to add some probiotics to your diet. Probiotics are ‘friendly bacteria’ that are naturally present in our digestive system and they help promote healthy digestion and boost the immune system. Live strains of these good bacteria are found in many foods, like fermented dairy products and probiotic-fortified foods like sauerkraut, pickled vegetables, fermented bean paste such as tempeh and miso and even soya sauce.
Right now, this is my favorite way of getting lots of probiotics in my gut. Here is the recipe.
Ingredients:
- 4 dl coconut milk
- 1 sachet or 4 probiotic capsules (or 3-4 tablespoons of vegan yogurt for the cult)
- 1 or 2 tablespoons of honey or stevia
- 1 tablespoon of lime juice
- ¼ teaspoon of vanilla
Instructions:
1. Sterilize the jars: I did it in the oven, at 100 degrees and 20 minutes.
2. Mix the ingredients and whisk the probiotics to combine everything. You can also add in store-bought coconut yogurt now. I tried Coconut yogurt before but I prefer using the probiotics.
3. Pour into a jar and allow the yogurt to set for 12-24 hours. I kept it in a warm, dark place (cupboard) for about a day without ever disturbing it.
4. Chill the yogurt and enjoy!
