Vegan crackers like these are quick to make and, in my opinion, taste even better than the ones made with eggs. Try them with hummus, guacamole, butter, tahini, and veggies—and get all the good health benefits from one of my favorite superfoods: seeds. Seeds are rich in fiber, omega-3 fatty acids, zinc, magnesium, and even vitamin B. They also contain some protein, helping to balance blood sugar levels. Give it a try and enjoy the health benefits!
Vegan Crackers
Ingredients:
- 1/2 cup pumpkin seeds*
- 3 tbsp flaxseed
- 2 tbsp chia seeds
- ½ cup hemp seeds½ cup grounded flax seeds
- 3 tbsp sunflowerseed*
- 1-2 tbsp psyllium fiber
- 1 tsp pink salt or any other tasty salt
- ½ cup water
- 2 tbsp coconut oil
Let the seeds with *-sign soak overnight (at least 6 hours).
Instructions:
1. Mix the dry ingredients in one bowl and melted coconut oil, water and salt in another. Combine and mix well.
2. Divide and shape the dough into a square. Roll out the dough and cut it into cracker-sized rectangles.
3. Dry crackers in a dehydrator or low temperature oven overnight.
