This is a super simple basic recipe for a chia pudding that you can easily modify by adding berries or fruit for flavor. You can also upgrade the recipe and make it into a healthy dessert. I will share my favorite cacao-licorice version too, that I ate way too much last winter.
Ingredients:
- 1 can of coconut milk (or 400 ml of any other non dairy milk)
- 4 tbsp chia seeds, I use black ones but white ones work just as well
- 1-2 tbsp of honey or sweetener of choice, stevia tastes pretty good with coconut milk
- 1 tsp pure vanilla extract
Instructions:
1. Combine the coconut milk, honey, and vanilla extract in a small bowl. Stir until combined. Sprinkle on the chia seeds and stir them in thoroughly.
2. Pour mixture into a pint jar and refrigerate overnight, or until it reaches the desired thickness, stirring occasionally. If the pudding seems too thick.
3. Serve pudding with cinnamon and berries of your choice.
Very rich in flavor chocolate-licorice chia snack
Ingredients:
- 1 can of coconut milk (or 400 ml of any other non dairy milk)
- 4 tbsp chia seeds, I use black ones but white ones work just as well
- 1-2 tbsp of honey or sweetener of choice, stevia tastes pretty good with coconut milk
- 2 tbsp of raw cacao powder
- 1-2 tsp of powdered licorice root
Instructions:
1. Mix cacao and licorice powders and coconut milk together, smooth out, and add agave nectar and chia seeds.
2. Let sit at least 10-15 minutes or overnight until thickened.
3. At this point your chia should have grown in size, and your mixture should be thick like a pudding, placed in serving dishes and topped with toasted coconut flakes.
